Bacon Mozzarella Burgers

Ingredients

1.5 pounds ground beef

4 bacon slices

1/2 cup mayonnaise

1/2 teaspoon garlic, minced

coarse salt and freshly ground pepper, to taste

4 kaiser rolls split

2 tablespoons olive oil

1/2 8-ounce fresh mozzarella ball sliced

1 red onion sliced

1/2 head red leaf lettuce leaves separated

1 tomato sliced

Heat the grill to medium-high heat.

Form the meat into equal size patties. In a skillet, cook the bacon over medium heat until crisp, 6 minutes; drain on paper towels. In a bowl, mix the mayonnaise with the garlic; season with salt and pepper.

Brush the cut sides of the rolls with oil and lightly toast on the grill. Brush the burgers with a little more oil and season well with salt and pepper. Grill for 4-5 minutes; flip and top with the cheese.

Cook for 4-5 more minutes, making sure the burgers are cooked through. Spread the bottom roll halves with the garlic mayonnaise. Top with a burger, bacon, lettuce, tomato and onion and serve.

Baked Beans With Apples

Ingredients

1 16-ounce can Bush's baked beans

1/2 yellow onion chopped

1/4 cup brown sugar

1/4 cup barbecue sauce

1 Granny Smith apple diced

coarse salt and freshly ground pepper, to taste

cooking spray

Instructions

Preheat oven to 350 degrees.

In a baking dish* coated with cooking spray, combine beans, onion, sugar, barbecue sauce and apple. Season to taste with salt and pepper. Bake for 30 minutes, or until hot and bubbly. *Baking dish sizes: 7 x 3 loaf pan (for 2), 8 x 8 pan (for 4), 13 x 9 pan (for 6-8).
